from the kitchen: cinnamon chip muffins

One thing I do a lot of when the temperatures drop?

cinnamon chip muffins:

Mix the dry ingredients:

1 1/2 cups flour
1/2 cup brown sugar
1 box vanilla pudding mix
2 teaspoons baking powder
1/2 teaspoon salt
1 1/2 teaspoons ground cinnamon
1 tsp pumpkin spice

In a separate bowl, whisk the wet ingredients:
1 egg, beaten
3/4 cup milk
1/2  cup vegetable oil

Make a well in the dry, and stir until mixed (but not smooth!). Add one bag of cinnamon chips.

Bake at 400 for about 20-25 minutes. (Keep an eye on them. When the tops are slightly brown, they're done.)

  1. I do the same! Nothing more cozy than warm oven and yummy aromas. Can't wait to try this recipe! Thanks~

  2. Yes! I agree. The smell is half of the reason I do it! ;)

  3. Oh my goodness this recipe looks amazing!!! What size vanilla pudding container do you use?

  4. M.M.E. — I used just a box of the dry pudding mix added right into the flour! So yum! :)

  5. Ilene - let me know if you try it! :)
